Using seasonal and locally sourced ingredients, take a fresh look at Spring entertaining - soups, mains and puds that reflect the brighter weather and fresh produce that's now available.  Recipes may include: 

Pea, mint & spring onion soup with parmesan crisps OR Courgette, mint and parmesan fritters OR Smoked mackerel pate

Crab fishcakes with horseradish relish OR Salmon with a sweet hot crust and watercress mayo OR Parmesan chicken

Raspberry or Rhubarb posset and lemon shortbread OR Passion fruit filled profiteroles

All courses can be suitable for vegetarians.
