The course is an introduction to sourdough bread baking with a demonstration by Tim Slater of creating a sourdough loaf through the different stages of:

  • preparing and managing a starter

  • feeding the starter / preparing the sponge

  • fixing the flour, water and salt and autolyse

  • stretch & fold / bulk ferment

  • shaping and final proof

  • baking

 This is then followed by students making the bread themselves in a hands-on workshop. Participants leave with:

  • sourdough starter in a Kilner-style jar

  • baked loaf

  • proving basket (banneton)

  • dough to bake at home the following day

  • dough at stage one (need to bring container)

  • dough scraper

  • instructions

All courses can be suitable for vegetarians.
