The course is an introduction to sourdough bread baking with a demonstration by Tim Slater of creating a sourdough loaf through the different stages of:
preparing and managing a starter
feeding the starter / preparing the sponge
fixing the flour, water and salt and autolyse
stretch & fold / bulk ferment
shaping and final proof
baking
This is then followed by students making the bread themselves in a hands-on workshop. Participants leave with:
sourdough starter in a Kilner-style jar
baked loaf
proving basket (banneton)
dough to bake at home the following day
dough at stage one (need to bring container)
dough scraper
instructions
